Yerba Maté

Yerba Maté is a herb native to South America also known as Ilex paraguariensis.  It contains caffeine, but the stimulating effect is gentler and longer lasting.  The taste is herbaceous and grassy, with a pistachio nuttiness.

Use a heaped teaspoon per cup.

Infuse for 5-10 minutes at 100°C.
